First update since my weight loss blog 2 weeks ago! First off, thank you so much for your incredible support. I was so overwhelmed by it and it truly means alot. I know there is many on this same journey so please share your stories with me! It's nice to know you are not alone! :)
Week one was surprisingly okay. I expected to crave absolutely everything bad for me but I found I was able to choose healthier alternatives and still feel satisfied.
I am the chef in the house, so everyone is eating the same dinners as me. I made Shepard's Pie & Chicken Curry using healthier ingredients and not trumping my own horn but they were amazing! I've also decided to cut out bread (for the most part), but that's a personal choice and not essential.
We did the grocery shop Wednesday in Dunne's Stores and I made out a list of all the 'syn free' food to stock up on. I found the slimming world app was extremely useful to calculate syn foods with a simple search. If it was high in Syns it didn't go in! (So poetic Katie!). If you have joined slimming world I highly encourage you to download the app. It makes life a lot easier.
Wednesday evening it was a simple Omelette for dinner, Thursday I did healthy Chicken Fried Rice & SW Chips. Friday I had Stir Fry, Saturday was Fake away night with Salt and Chili Chicken, Mayflower Curry Sauce & of course SW Chips! And Sunday was my favourite Spaghetti Bolagnese using the Slimming World recipe. It was SO good.
Meal planning has become a key tool to eating healthier. I sit down for 5 mins at night and plan my menu for the next day. That way when I wake up, I know exactly what I have to cook for the day. I did have an 'off' day Sunday where I went out to lunch and had Lasagne and Cheesecake and honestly, while the food was lovely I felt so sick after it. The healthy food makes me feel ALOT better!
I also upped the exercise game going for four 30 minute walks and 3 gym sessions; and I am loving every minute of it!
I lost 4.5lbs this week :)
wWeek two was alot of the same dishes as week one. I discovered Loughnane's Skinny Sausages which have become a game changer to breakfast in the mornings. I am really enjoying my healthy fry ups and feel so full after it!
I was feeling extremely tired last week and as a result I didn't do much exercise. I also had a 'wild Saturday night' at the Lip Sync Battle where I enjoyed a few drinks - which I throughly enjoyed. I also went out for lunch Sunday where I ate a delicious chicken curry.
So after two 'off' days I started to dread the thoughts of the scale on Monday but I was delighted when I stepped up and saw I have lost another 2.5lbs. Bringing my total weight loss for the two weeks to half a stone!!
Going forward next week, meal prep is going to be key. I have started to put on extra when I am cooking dinners and take some out to put in my freezer and fridge for lunch and dinner on the busier days. This helps me stick to plan.
The health benefits have been unbelievable. With having Crohn's I always have to watch what I eat but I have found HUGE improvements on the Slimming World plan. For that reason alone I am determined to continue.
To anyone doing this with me, or trying to lose some weight remember it is a marathon not a sprint! If you only lose half pound a week it is better than putting it up! The turtle won the race afterall ;)

This weeks recipe is a super tasty and super healthy beef stir fry with a gluten/dairy free sauce. I hope you enjoy making it, trust me, it's delicious!
Serves 4 potions
1 Pepper (i used red for colour)
1/2 head of Broccoli
1/2 can of Water chestnuts
1 tbsp Garlic
1 tbsp Ginger
1 large steak (i use round steak for stir fry)
2 tbsp Rapeseed oil
Salt & Pepper to taste
Boil in bag rice (enough to serve 4)
3 tbsp Tamari Sauce (gluten free soy sauce)
3 tbsp balsamic vinegar
2 tbsp mango chutney
1 beef stock cube (kallo gluten/lactose free)

Some of you may know I was ill before Christmas and as a result I have been put on a LOFFLEX Diet. This basically means I can't have Wheat, Gluten, Dairy, Eggs or Soya... And low fat cooking methods only (I know, hardship!)
